Gingerbreads/medovníčky
Slovak cuisine varies slightly from region to region. It was influenced by the traditional cuisine of its neighbours and influenced these as well. Usually baked at Christmas and Easter time, but also all year long, Slovak traditional sweets and cookies are usually home baked and harder to find in stores.

how to make gingerbreads
Medovníčky – Gingerbreads
Ingredients:
160g honey
200g icing sugar
120g margarine or butter
1teaspoon baking soda
500g flour
2 eggs
1teaspoon cinnamon
1teaspoon mixed spice (anise, ginger)
1 beaten egg
icing sugar, lemon juice and egg white for icing
Instructions:
Put the honey, soda, sugar and margarine or butter in a saucepan and mix together until melted. Add the flour while hot. Let it cool off and add eggs, cinnamon and mixed spice. Stir properly until you have smooth dough. Leave the dough in refrigerator overnight. The next day, add some more flour when necessary. Preheat the oven to medium heat. Roll out the dough to about 4 mm thickness and cut out with cookie cuttes making different shapes. Place cookies on greased cookie sheets and bake in hot oven 170 degrees C for about 6 minutes or untill golden. When you take the cookies out of the oven, brush them with beaten egg while they are still hot. After they cool off you can start decorating them with mixture of pre sifted icing sugar and egg white mixed together with lemon juice. Place icing in a plastic bag and cut a small hole in it. Pipe icing on the gingerbread men. You can also put one half almond or chocolate chip on each cookie or decorate it with icing.
